Her pageant career continued to ascend. In 2019, she was appointed Miss Universe India 2019, since no Miss Diva pageant was held that year, and she went on to represent India at the 68th Miss Universe pageant in Atlanta, Georgia. She placed in the Top 20, ending India's consecutive unplacement streak at the event. Four years after the 2015 Miss Grand International pageant, the original winner was dethroned, and after a series of title changes, India became the assumed winner of that edition. Vartika also won the 'Best Social Media' award at the contest and placed in the Top 10 for Miss Popular Vote and Top 20 for Best National Costume. Her finale gown was designed by Shane and Falguni Peacock, and her national costume was designed by Malvika Tater.

Beyond pageantry, Vartika has made her mark in modeling and health advocacy. In 2016, her interview and photoshoot were published in the January edition of GQ India, and the magazine ranked her among the hottest women of India in 2016 and 2017. She competed in the Kingfisher Model Hunt in 2017 and appeared on the Kingfisher bikini calendar's March and October pages. As a public health professional, she has contributed as a technical adviser to a health-based government project in association with the World Bank. In 2018, she founded a non-profit called 'Pure Humans' to spread awareness about public health issues, and she has worked with the Government of Uttar Pradesh on tuberculosis education. Vartika also serves as a Goodwill Ambassador for Smile Train in India, helping children born with cleft lip and cleft palate.
